My mantra for the day. Perhaps if I keep repeating it I will feel more confidant! Emma had her procedure yesterday and she does have Celiac Disease. I really am feeling OK about it because I was pretty sure she had it so I was sad a couple of weeks ago and now I just feel ready to get on with it already. It actually feels really good to know that she went the whole day today without eating something that has been hurting her body this whole time and we just didn't know it.
Can I say that I love the nurses and anesthesiologist that helped us yesterday? I told them that she really freaked out last time she had to get an IV (five people holding her down while she hyperventilated and two weeks post IV still complaining of pain in her hand and 8+ months of talking about it afterward)and could they please do something to make it easier for her? They gave her an anti-anxiety medicine first and she got really loopy and only feebly protested when they came in to start her IV. She kept asking me why she couldn't sit up and saying, "Look! There's two sinks!" while looking at the one sink in the room - she was so sweet. She had a pretty tough time waking up from the anesthesia but once she got her hands on a root beer slushee and we turned on "Up" she was good to go.
The whole drive home she kept saying, "I just don't know why they gave me that sleeping medicine," and "I wish I wasn't allergic to gluten."

Poor little Emma. I have another friend who is going through something similar with her kids. Lots of allergies, and are practically vegan because of them. Online research, Whole Foods, Trader Joe's. That's about all I can say. Good luck! You are amazing to be able to go through this. There actually is a vegan child's cookbook my friend talked about. If you'd like to get in contact with her let me know. She's on facebook and who knows, maybe you can exchange recipes and tips or something.

i love that. you're a great mama manders and i know it'll be a challenge but you're the perfect mom for her. (sassiness might be the best medicine?) i have a friend who made the best gluten-free cinnamon rolls - i'll get it to you.

Rice flour is great - it is a little harder to work with, but it is greast - there was a family in Cali with us that had the same problem - mom and daughter - she bought a ton of food on line since it was tough at the commisary - but they ate a lot of rice chex
Oh Emma you are a sweetheart! You to Amanda. Those rootbeer slushees are way to sweet for me but I love the ones they make out of crystal light. Wait maybe I spent to long at the hospital to know how they make slushees. Could also have something to do with the 15 pounds I gained while Colby was in! You will do great with the gluten free diet! I hope Emma starts feeling better soon.
my one yr old nephew had to get stitches the other night and they gave him the same medicine that totally made him loopy. kind of funny. sorry about the gluten thing. I know you guys will come out of all of this champions. we love you.

So, who is the other "Aubrey" who leaves comments on your blog? We are keeping you and your family in our prayers. You are both strong girls who put up with a lot of health challenges. Perhaps you could look at it as a bonding experience? You are great and I love you tons!

Oh Amanda, my girls are both gluten free and free of pretty much every other good tasting food out there. I'm also going back on the gluten free dairy free diet because now that I'm eating it again I'm seeing what it does to my body!!! So, if you ever want to chat recipes, etc. I could help out some! It is hard the first few weeks as you're figuring it all out but I promise that it gets easier! And its a blessing that there are so many gluten free things out there!!!!

Oh Amanda... and oh emma. I once had to make a glutten free meal... it was hard and it didn't taste very good... Good luck with that.
I just made some gluten/casein free chicken nuggets that I LOVE. They are really tasty, I found the recipe here: http://gfcfrecipes.blogspot.com/search/label/Recipes%20-%20main%20dishes
She has tons of recipes, but this is the only one I've tried. You can dip the nuggets in Heinz ketchup (it's GF) or another brand that's GF. I planned on freezing a big batch of these, but we ate most of them already because they were that good!! (P.S. I used all brown rice flour)
Oh Goodness Amanda! You are one amazing woman. The wonders of the internet! You shouldn't have a hard time finding recipes at least! Melissa Cardon has a kid friendly GF book. I'll ask her what it was.
